The Best Salad EVER!

Before I share the Best Salad Recipe ever with you, I want to start by pointing out to you that while I will eat a salad (unlike someone else I know), I do not CRAVE salads.  

One should note that I only eat salads when:
I want to set a good example for the picky little eaters.

It is served to me.

It is dripping in blue cheese dressing and I’m about to follow it up with a giant steak.

That said, I CRAVE this salad and you will too.  Trust me.  Otherwise, I think you need to have your taste buds examined.


4 cups iceberg lettuce
1 tomato cut in 1/8
1/2 cup baked ham, julienned
1/2 cup swiss cheese
1/2 cup pimiento stuffed green Spanish olives (I sometimes omit)
2 cups  dressing recipe
1/2 cup Romano cheese
2 Tablespoons Lee & Perrins
1 lemon (juiced)

1/2 cup Spanish olive oil (yes, it makes a difference)
4 garlic cloves minced
2 teaspoons oregano
1/8 cup white vinegar

Prepare dressing 1-2 days in advance and refrigerate for best results.

If you make this dressing, take a picture of it and share it with me. I am too busy devouring this salad to take the time to photograph it.

Basket on the stairs

When you live in a two-story home you are made more aware of your laziness. Hence, the need for the infamous basket on the stairs. The basket is a catch-all for all the things that need to be taken back upstairs—-but not right now, later.  Presumably when I have more energy or can make one of the kids do it.

I must admit, it certainly makes cleaning up easier.  However, if you are going to use this system  its important to make sure it truly serves its purpose—- and doesn’t become that thing that it is not: a place to put things that have no home. 

A place for everything, and everything in it’s place.

 No, to work efficiently there must be two strictly enforced rules…

The only things allowed in the basket, are things that belong upstairs
The basket must be emptied every night, without fail.
No exceptions.

Hello Again!

First, I want to thank so many of you kind readers who sent me notes and words of encouragement during my quiet time on this blog.  Your prayers, emails and kind thoughts truly meant a lot to me.  I had been quiet during a very chaotic time in our family’s life and something had to give for my survival—so I chose blogging.  Interestingly enough my quiet time followed a post a wrote about being under attack—-and my silence had nothing to do with that post.

After building our “dream home” we found out it wasn’t as much as a dream as we’d hoped. I cannot say much (because of the lawsuit) but basically we had to move out for 5 1/2 months with 5 kids, in the middle of the Christmas holidays and our homeschool year, into a much smaller (cramped) space.  During this time I tried to learn to be content in all circumstances, and failed miserablySo I have much to work on.

Now, in a whirlwind, we are finally back in our home!  We moved in (although there was still work being done to and in the house) a week before our 10 day trip to Italy (an early gift from Big Daddy for my 40th birthday—-in November) and I’m busy playing catch up.  

Catching up on the unpacking, organizing and decluttering.  Catching up on the homeschooling—we will have a 45 minute summer break this year, and I ‘m so not kidding about that!

In the coming weeks I will share photos from our home and blog about decorating, organizing and share what God is showing me in this season of my life.
